Recipe Remake: Homemade Chicken Nuggets & Zucchini Sticks
If there is one food my kids LOVE it is chicken nuggets. Find me a kid that doesn't and I'll be shocked. Most people wouldn't think to look at the package for the
breading of a chicken nugget; me being one of those. But, I learned the hard way, chicken nuggets are sneaky in the food allergy world. Why's that? The batter. I'm from the south...we like fried food. Fried food is always breaded or battered in yummy goodness, very often milk/egg wash. That poses quite a problem for an allergy kid. I've learned the fast food restaurants to go to and avoid and learned a few of the frozen packages to avoid as well. As an adult, I like chicken nuggets but would like a little more flavor than the fast food joint or a frozen nugget. That is where this recipe comes in. Chicken nuggets for the kids with some flavor for mom and dad.
I found the original recipe for both of these from Skinny Taste and of course noticed a few things that my allergy son couldn't have, cheese and the egg wash. I put the foods on my meal plan and grocery list and hoped for the best. As I was grocery shopping, I found yet another kink in my plan. Breadcrumbs contain milk... Yay. So begins the journey, adapting the recipe to be #jaceapproved. The cheese was an easy fix...just don't use it. The egg took a little more research. I looked, searched and found a few alternatives for substitution. Butter, buttermilk, sour cream, Greek yogurt, were a few of the suggestions. For just an egg allergy, that would be great. However, we can't do milk either. Another suggestion was applesauce. I've used applesauce in cakes but just wasn't sure if I wanted apple taste on my chicken... So I just used olive oil. It's a great cholesterol lowering food and I use it all the time anyway. The breadcrumbs were a little more challenging. I first tried complete panko. However, they are larger crumbs and didn't coat as well as finer crumbs. Then I decided to make my own using day old hamburger buns! The chicken nuggets turned out great. Breading stayed in tact and had good flavor. The zucchini was delicious but not really "coated". I ate it with a fork and the fallen off breading. So here is my #jaceapproved version of chicken nuggets and zucchini sticks
Nugget and Zucchini Breading
1 box Progresso Panko Italian Style Bread Crumbs
4 day old hamburger buns (or any bread) to make homemade bread crumbs
Salt & Pepper to taste
Toast hamburger buns in toaster and grind with food processor into fine crumbs. Add homemade bread crumbs, box panko, and salt & pepper (to taste) to a large ziploc bag.
Zucchini Sticks
3 medium sized zucchini cut into "fry" shape
Olive oil
Breading above

1.5 lbs boneless, skinless chicken tenders, cut into bite size pieces

Zucchini Sticks
3 medium sized zucchini cut into "fry" shape
Olive oil
Breading above
- Preheat oven to 425 degrees.
- Slice zucchini to desired "fry" shape - 2"- 3" length
- Coat zucchini in olive oil
- Toss in breading and coat
- Place on greased sheet pan and bake 25-30 mins
Homemade Chicken Nuggets
1.5 lbs boneless, skinless chicken tenders, cut into bite size pieces
Olive oil
Breading above
- Preheat oven to 425 degrees
- Cute tenders into bite size pieces
- Coat nuggets in olive oil
- Toss in breading and coat
- Place on greased sheet pan and bake 10-15 mins until done.
